Fatal Fruitcake (3 page)

1 cup white sugar

1 cup brown sugar

3 cups all-purpose flour

1 tsp. baking soda

¼ tsp. salt

1 tsp. cinnamon

¼ tsp. ground ginger

¼ tsp. ground nutmeg

1 cup applesauce

1 cup vegetable oil

3 eggs

1 tsp. vanilla

¼ cup whisky, rum or brandy

Mix all ingredients well—you will have a fairly stiff batter.

Stir in:

1 cup sweetened flaked coconut

2 cups mixed dried fruits (as above)

1 cup chopped pecans

Bake approximately 1 hour 15 minutes—times may vary by as much as 15 minutes, depending on your oven.

Let cool in pan 10 minutes, remove from pan and complete cooling on wire rack.

May be glazed with mixture of confectioner’s sugar and milk to drizzling consistency.
